Ingredients
  

  • 4 chicken breasts $8.00
  • ▢1 packet ranch seasoning mix $1.98
  • ▢2 Tbsp Taco Seasoning $0.50
  • ▢1 can black beans 15 ounces ($0.88, drained and rinsed)
  • ▢1 can Rotel 8 oz $1.18
  • ▢1 can corn 15 ounces ($0.64, not drained)
  • ▢1 block cream cheese $1.84
  • ▢2 fresh limes $1.00

Method
 

  1. Place 4 chicken breasts into the crock pot.
  2. Add 1 packet ranch seasoning mix, 2 tablespoons taco seasoning, 1 can (15 oz) black beans (drained and rinsed), 1 can (8 oz) Rotel, and 1 can (15 oz) corn (not drained).
  3. Cover and cook on high for 3–4 hours or on low for 6–8 hours.
  4. Shred the chicken directly in the crock pot.
  5. Squeeze the juice from 2 fresh limes over the mixture. Add 1 block (8 oz) cream cheese and stir to combine.
  6. Continue cooking for 30–60 minutes until the cream cheese is fully melted and incorporated.
  7. Serve over rice or with tortillas and enjoy!

Notes

Sometimes we add green chilis or bell peppers to the recipe. You can also add a can of diced tomatoes if you prefer more tomato flavor. I like to let the mixture sit 30 minutes to absorb any liquid.
Notes – you can top with shredded cheese and avocados!
Refrigerate the leftovers in an air tight container for up to 5-7 days.
A Fiesta Ranch Seasoning Packet can be used instead of the Ranch Mix and Taco Seasoning if those are available in your area.
