Creamy Street Corn Pasta Salad

Ingredients
  

  • For the dressing:
  • 1/3 cup sour cream
  • 4 oz cream cheese room temperature for easy blending
  • 3/4 cup crumbled cotija cheese or feta for a milder taste
  • 2 tbsp olive oil
  • 1-2 grated garlic cloves freshly grated for best flavor
  • 1 tbsp chopped fresh chives
  • Salt and pepper to taste
  • For the salad:
  • 1/2 cup diced spicy cheddar cheese
  • 2 cups grilled or roasted corn I use Birds Eye fire roasted corn for convenience
  • 1/2 cup torn fresh basil
  • 1/2 cup chopped fresh cilantro
  • 1 diced avocado
  • 1 head shredded romaine lettuce
  • 1 lb short pasta such as rotini, fusilli, or farfalle
  • For the chili butter:
  • 4 tbsp butter I like Kerrygold salted butter
  • 1/2-2 tsp cayenne pepper
  • 2 tsp smoked paprika
  • 2 tbsp chili powder
  • For the lime mayo dressing:
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice

Method
 

  1. Step 1: Make the Dressing
  2. 4 ounces room temperature cream cheese
  3. 1/3 cup sour cream
  4. 2 tablespoons extra virgin olive oil
  5. 1-2 grated garlic cloves
  6. 1 tablespoon fresh chives, chopped
  7. Salt and pepper to taste
  8. 3/4 cup crumbled cotija or feta cheese
  9. In a large salad bowl, combine all the ingredients for the dressing.
  10. Season to taste with salt and pepper.
  11. This will be the base that flavors the entire salad.
  12. Step 2: Cook the Pasta and Combine Ingredients
  13. 1 pound of short pasta
  14. 1 head romaine lettuce, shredded
  15. 2 cups grilled or roasted corn (from 3-4 fresh ears)
  16. 1/2 cup fresh basil, torn
  17. 1/2 cup fresh cilantro, chopped
  18. 1/2 cup spicy cheddar cheese, diced
  19. 1 avocado, diced
  20. Bring a pot of salted water to a boil.
  21. Cook the pasta until it reaches an al dente texture, following the package directions for timing.
  22. Once cooked, drain the pasta and immediately toss it with the prepared dressing in the salad bowl.
  23. Add the lettuce, corn, cheddar cheese, basil, cilantro, and avocado to the bowl.
  24. Toss everything together to ensure even coating and flavor distribution.
  25. Step 3: Prepare the Chili Butter
  26. 4 tablespoons salted butter
  27. 2 teaspoons smoked paprika
  28. 2 tablespoons chili powder
  29. 1/2 to 2 teaspoons cayenne pepper, adjust to preference
  30. In a skillet over medium heat, melt the butter until it turns golden.
  31. Stir in the chili powder, paprika, cayenne pepper, and a pinch of salt.
  32. Cook the mixture for another minute, allowing the spices to bloom, then remove from the heat.
  33. This will add a flavorful, spicy kick to the salad.
  34. Step 4: Make the Lime Mayo Dressing
  35. 1/4 cup mayonnaise or yogurt
  36. 2 tablespoons lime juice
  37. In a small bowl, mix together the mayonnaise or yogurt with fresh lime juice and a pinch of salt.
  38. This creamy dressing will complement the spices from the chili butter and add a refreshing tang.
  39. Step 5: Serve and Enjoy
  40. Serve the salad warm or cold according to your preference.
  41. Top with a drizzle of lime mayo and a generous spoonful of the chili butter.
  42. Letting the salad sit for a bit will develop more complex flavors, enhancing the taste.
